
Chocolate Matcha Energy Balls
Full of raw goodness and the magic of matcha, these delicious energy balls makes a great morning or afternoon treat.
Ingredients
1 cup natural almonds
2 cups medjool pitted dates
1/3 cup organic cacao powder
1/3 cup desiccated coconut
2 tbsp chia seeds
2 tbsp sesame seeds
2 tbsp maca powder
2 tbsp nut butter of choice
2 tbsp coconut oil
2 tbsp coconut nectar
1 tsp Storm+India Power Matcha
Pinch of rock salt
How to Make
1. Grease the bottom and sides of 20cm square cake pan. Line the pan with 2 layers of baking paper long enough to hang slightly over 2 of the sides.2. Place the nuts in the bowl of a food processor pulse until they are in little pieces. Add the medjool dates, organic cacao, coconut oil and nectar, Storm+India Power Matcha and salt. Pulse until well combined, about 2 minutes, stop and scrape the ingredients from side of the bowl.
3. Scrape the mixture into the prepared pan and press down with a firm spatula or the palm of your hand to compact it, making the top as level as possible. I use a glass placed on its side as a mini rolling pin
4. Refrigerate until firm. Lift out of the pan using the parchment paper overhanging. Cut into bars about 10cm x 4cm. Lightly dust with more Power Matcha powder.
5. Layer the bars between waxed paper in an airtight container and refrigerate for up to 1 week.
