Matcha Cashew Lemon Cake

A vibrant blend of antioxidant-packed matcha, creamy cashews, and immune-boosting zesty lemon

INGREDIENTS
For the base
2 cups almond meal
3 tbs cacao powder
3 tbs melted coconut oil
2 tbs maple syrup

For the topping
1 cup cashews, soaked until soft, drained and rinsed
1 cup coconut cream
2 tbs maple syrup
1 tbs melted coconut oil
2 tbs @stormandindia Mood Matcha
1 tsp vanilla
1 tbs lemon juice 

HOW TO MAKE
Prepare the base ingredients by mixing everything together in a bowl.
Press into a lined baking tray and pop in the freezer to set slightly.
Meanwhile, in a high-powered blender, blend all of the topping ingredients until silky smooth.
Pour over the base, and pop back in the freezer to set.
Once set, top with a squiggle of melted dark chocolate and before serving, a few chocolate-dipped berries.
