Storm + India Matcha Twix

A deliciously decadent treat with a boost of health benefits! These Matcha Twix bars combine the rich, chewy goodness of caramel with the energizing, mood-boosting powers of Mood Matcha.✨🍫 


INGREDIENTS
For the matcha biscuit base 
1 ½ cups almonds
3 tbs melted coconut oil
2 tbs maple syrup
1 tbs @stormandindia Mood matcha 
1 tsp vanilla
A pinch of salt

For the caramel layer 
2/3 cup smooth peanut butter
1/3 cup maple syrup
¼ cup coconut oil
1 tsp vanilla
A pinch of salt
Melted dark chocolate to coat with a sprinkle of salt flakes 
 

HOW TO MAKE
Preheat the oven to 180 degrees Celsius.
In a large bowl, mix together all of the matcha biscuit base ingredients.
Press into a small, lined baking tray. To get a nice high bar, we suggest a tray at around 15cm x 15cm.
Bake in the oven for 10 minutes, until the surface has started to brown slightly.
Take out of the oven and set aside to cool.
Whilst cooling, in a small pot, melt together the caramel layer ingredients. Stirring constantly, allow the caramel to come to a very gentle simmer before removing from the heat.
Pour over the cooled matcha biscuit base, and place in the fridge for 4 hours, or in the freezer for 1.
Once set, cut into bars of your desired size, and coat in the melted dark chocolate. Add the salt sprinkle, and place back in the fridge or freezer to set.
