Rooibos Chai Apple Crumble
This Rooibos Chai Apple Crumble has been our favourite go to dessert and nutritious breakfast. Coconut oil replaces butter to make the vegan crumble topping, organic apples are infused with delicious rooibos chai tea and cinnamon. We enjoy this spiced crumble topped with coconut yoghurt or vanilla bean coconut ice cream and fresh raspberries.
Ingredients
FILLING
6 medium apples, peeled, cored and chopped
½ cup coconut sugar
juice of 1 medium lemon
2 cups water
3 tbsp S+I Rooibos Chai tea
1 tsp ground cinnamon
TOPPING
1 cup oats
1/2 cup almonds
½ pecans
½ cup almond meal
½ cup coconut sugar
1/3 cup coconut oil
How to Make
1. Preheat your oven to 180 degrees.
2. In a large sauce pan, bring the water to a gentle boil then add in the S+I Rooibos Chai tea and remove from the heat. Allow to steep for 4-5 minutes.
3. Pour the water through a strainer then transfer it back into the sauce pan and add the apples as well as the other filling ingredients.
4. Cover and simmer on a low heat until the apples are nearly cooked through and the liquid has thickened.
5. To make the topping, combine all the topping ingredients in a bowl and mix well.
6. Place the filling mix into a baking dish and top with the topping.
7. Bake in the oven for about 20 minutes or until the topping is golden.
